citrus cranberry scones.

this never-ending winter is squashing my soul. i’ve spent the last couple of weeks feeling really sorry for myself; moping around, sleeping too much, and eating canned soup.  it’s been pretty dismal. 

last night we broke the spell with a 4-hour-long dance party, and i woke up this morning with sore feet, a smile, and hankering for baked goods. starbucks’ treats all looked kind of sad and colorless, so we took it on down to whole foods and got out an hour later with all the essentials:  robusto cheese, a fennel bulb, lavender-infused dark chocolate, and a potted hyacinth.

i used a really simple scone recipe i found on i substituted greek yogurt for sour cream, used frozen cranberries, and added a whole bunch of orange, lemon, and lime zest AND vanilla extract to the dough. i loved the idea of grating the frozen butter into the flour/sugar mix. i wish i had thought of it myself. 

they came together so fast, baked in 15 minutes, and now they are hot and bright and fragrant and the cranberries pop in your mouth. there are beams of afternoon sunlight pouring in, my roommate is napping on the couch, i’m still in my pj’s, and all shall be well, all shall be well, and all manner of things shall be well.

  1. Wow, the scones look great, and I believe I have all ingredients in the house. I may just make some myself, and serve them with a generous dollop of whipped cream…so like the Queen of England. Some hot tea and a dog at my feet will do the rest.

  2. Dear Cella: Here’s the other Mom weighing in here! (hey, Heidi!) Those scones do look wonderful. Grating the frozen butter into the flour? Never heard of that one and I will have to try it. Good for you, doing some yummy cooking therapy for yourself! Love from Minnesota where the birds are chirping, the Mississippi River is starting to open up again and the snow seems to be melting!
